Baked Plantain Chips

These baked plantain chips are super easy to make, and delicious with ceviche, salsa, and all varieties of dips. I used a mandoline slicer to make these chips super thin and crispy, but it is possible to slice them thin with a knife too.
Crispy Baked Plantain Chips
2 Green Plantains, thinly sliced with mandoline or knife
Coconut Oil Spray
Sea salt
Preheat oven to 350 degrees. Spray a baking sheet covered with parchment or foil with coconut oil spray and arrange sliced plantains on the sheet. Spray the tops of the slices with coconut oil and top with sea salt. Bake plantains until the edges begin to turn light brown. Allow chips to cool down in a single layer which will allow them to crisp up.
